Spaghetti Carbonara

 Ok, actually I meant spaghetti in bacon, cream and eggs. The real carbonara only contains eggs and guanciale (cured pork jowl). No cream of milk is added.

This recipe features the widely popular "carbonara" with cream added.

       Ingredients

For crispy bacon bits

  1. Streaky bacon 100g - cut into thin slices.
  2. Oil as required.

For the sauce

  1. Back bacon 250g- cut into small pieces.
  2. Unsalted butter 25g
  3. Yellow onion 1 pc - sliced
  4. Garlic 3 cloves - chopped
  5. White wine 30 ml (optional)
  6. Cooking cream/whipping cream 1 ltr

To Finish (Serves 4-5)

  1. Dry spaghetti 500g
  2. Milk as required to lighten sauce
  3. Whole eggs 3 pcs
  4. Grated Grana Padano cheese or Parmigiano-Reggiano - 2 tbsp


Grana Padano cheese or Parmigiano-Reggiano as required for topping.
